And the results are in……

Recently I got the blood cholesterol results back from my doctor. My results in a word…. stellar. My doctor said I had “the best cholesterol in town”. Considering my “town” has a population of over 400,000 I’ll take that as a compliment.

I have gotten, of course, blood cholesterol results since I’ve been on low carb which have been excellent but always manage to lose them. So before that happens again I will post them in this blog so I have a “cyber-record” of them. My overall cholesterol was 5.75 which according to the “experts” as Tom Naughton would chime is high. Overall cholesterol is meaningless unless you understand the TYPE of cholesterol it is.

Any medical expert, even those preaching a low fat high carb diet, will tell you that Triglycerides are the biggest predictor of a future heart episode… ie. heart attack. My Triglycerides were 0.75 mmol/L. In American numbers that would be 66.43 That is excellent!!! They recommend it be less than 2.30 mmol/L. So my Trig # is more than 2/3rds LESS than they recommend. As Dana Carpender would say, if I’m going to have a heart attack, when is this going to happen? Dietary fat is NOT related to cholesterol in the blood. Sugar and bad carbohydrates are!!

Of course getting these results is pleasing to me but it also fires me up to keep up with the cause of educating North Americans about the healthy high fat low carb lifestyle to lose weight, obtain health and eradicate metabolic diseases like diabetes, hypoglycemia and even Alzheimer’s which those in the low carb community are now calling Type 3 diabetes, caused from sugar and a high carbohydrate diet. Links are being established now in the medical community between cancer and high carb diets.

Back to my cholesterol results though….
My HDL, the “good cholesterol” was 3.37 The recommended number is over 1.30 so my results are almost TRIPLE the recommended number. HDL is raised by eating FAT, people. Not to mention eating a lot of real food like veggies and salads. A low carb diet such as Atkins includes real food.

My LDL number is 2.04 which my doctor says is amazing. Why would I want to eat any other way?! Besides regaining my health by getting off Pantaloc for heartburn and frequent antacids, Diflucan for IBS as well as a medication for depression (if you were as unhealthy as I was you’d of been depressed too!), losing 100 pounds and going from obese to fit, muscular and active; I get to eat real food like butter, eggs, cheese, steak, chicken, fish, veggies and salads, nuts & seeds.

Not only are sugar and grains evil and responsible for North Americans poor health, fat has been unjustly vilified by not only the medical community but by the media and the governments of Canada and the U.S. Are they afraid big Pharma and the USDA will go bankrupt? Yes!! If people ever figure out that a high sugar, high carbohydrate, low fat diet are killing them and decide to eat the way our ancestors intended, then a few industries won’t be very happy. It’s always interesting to me that the Standard American Diet has the acronym S.A.D. I was SAD a few years ago and now that I’ve gotten my life back I’m happy. Why would I ever want to go back to S.A.D.?!

It lights my fire to get results back like this because I know I’m on the right track and I can tell people like me that it’s ok… you’ve been lied to about diet. Fat isn’t evil. Sugar and bad carbs are!! Once people start realizing it they can start living the long beautiful life they were meant to live… full of vigor, vitality and full health.

Fun new experiences!

If anyone had told me a few years ago when I was pushing 300 pounds that in a few years I’d get back into rollerskating and even be a derby girl on an awesome derby team I’d say “yeah, right!!”. Sometimes you amaze yourself. Of course I have to give a “shoutout” to my amazing derby sisters of LOCO. Hey girls!! 🙂

Not only did I amaze myself with getting healthy and losing all that weight but I am doing things I never thought I would be doing. In derby you need physical dexterity to maneuver around the track and agility to stop and start suddenly, transition from front to back, back to front, and muscle strength for balance and keeping low or as we call it “derby stance” in the pack so you don’t get knocked over. It amazes me what I have accomplished in derby in one year.

I used to rollerskate like a fiend as a kid but getting back into it was rough. I had to relearn my cross-overs on the corners again. I had to re-learn how to backwards skate and even now have to learn crossovers for that. What I love about life is that it’s the journey that is amazing. You can always amaze yourself.

I didn’t think I’d ever lose weight and keep it off, let alone get healthy and start a new sport requiring a muscular body and endurance. I didn’t think I’d ever meet not one set of friends (my derby sisters) but a whole new set of friends who celebrate my beloved Low Carb High Fat (LCHF) lifestyle, whom I met on the recent cruise. Not only that but I was recently on Jimmy Moore’s podcast show “Low Carb Conversations with Jimmy Moore and Friends” with his lovely co-host Mindy Noxon Iannotti.

So never doubt that you can accomplish amazing things in life. Life is full of possibilities and adventures just waiting for the taking. Have fun out there! 🙂

Here is the recipe I added for the show. Hope you enjoy!

Low Carb Pancakes
1/2 package low carb pancake mix or 1/2 cup almond flour
Scoop of Vanilla Whey Protein Powder (low carb of course)
3 eggs
Tbsp. Vanilla
1/2 cup Splenda or your favourite cooking sweetener…. more or less depending on your sweet tooth. Keep in mind the berries have natural sugars in them and will sweeten the batter up.
1/2 cup of heavy cream or sour cream
1/2 cup blueberries or strawberries…. or mixed berries
1/2 cup walnuts or pecans (optional, but yummy!)
Tbsp. Cinnamon Tbsp

Mix it all together into a batter and fry in butter and/or coconut oil like you would pancakes. Have with low carb syrup, butter and/or s/f jam with a side of bacon and/or sausage. Enjoy!
P.S. I freewheel recipes so if you find the recipe too dry just add more heavy cream or sour cream. To up your protein just add another egg.

What’s missing? Absolutely nothing, thanks.

It makes me chuckle a bit when I hear customers coming through my line raving about how good an ice cream flavour is or how good some other high carb nutritionally devoid food is. I’ve struggled the past week to find a topic “blog worthy” and was inspired today from a customer of all people ha ha! She was raving over how good some pita pockets were and said “Have you tried these? You have to try them!”. I usually just reply “No, they sound good.” just to end the conversation politely. Ever since the cruise (see what you guys have done! lol) I’ve been increasingly proud of being a low carber and have been more vocal about it. Today I replied something to the effect of “No, I eat a low carb diet”. She said “Too bad. You’re missing out”. To which I said, “No, not really.”

I realize I have the best of both worlds with my “diet”… and by that I mean lifestyle. I have the gift of good health and get to eat real food. I realize after years now of research through online and book sources that grains are not what people are meant to eat. Sugar is evil and they were responsible not only for my weight problems but for my poor health in general. They have caused my father’s health problems due to Congestive Heart Failure and the fact that he is currently on 9 medications. Although my mother isn’t diabetic I’ve seen hypoglycemic symptoms and arthritis in her and often wonder if she’d be better off eating the way I do. She just says it’s fine for me but not for her. I know I have faith in myself that if I indulge in something “off plan” I can jump right back into this way of eating because it’s so “ingrained” in me (pardon the pun) after 7 years that it has become part of who I am.

I still use the occasional low carb wraps in Harvey’s to eat my burger, cut in thirds just so I have enough to hold it with. I have low carb granola bars or l/c protein bars or “protein pudding” made occasionally on rush em, get outta the house mornings. As a whole I don’t eat grains, sugar, starch or white flour, rice or “Carbage”. What’s missing? Absolutely nothing, thanks. Everything in my diet is as it should be. Don’t feel sorry for me because I don’t eat nachos at social functions or bread at dinner outtings or have to pick the croutons off my salad. It’s what I’ve chosen… and will for the rest of my life. Do I miss feeling unhealthy? Nah. Do I miss the 100 lbs. of fat weighing me down and making me feel helpless? Nah. Do I miss Hypoglycemia and the crippling symptoms of headaches, sweats, nausea and trembling from crashing low blood sugar it causes. Heck no!! (feel free to substitute another word for “heck” 😉 Do I miss knowing that I was on the road to Diabetes and the inevitable health problems it entails? Nah again.

Don’t feel sorry for me, ok. My world is exactly as it should. So I’ll sit here eating my low carb high fat breakfast and know that my blood sugars are stable, my health is awesome and I feel great. Best of all I’ve secured my good health in the future by eating the way I never thought I would… a low carb high fat diet full of real food that I absolutely love!

Foodbags and High Fat

Ever since I have started on my low carb high fat journey I have started using a “food bag” to take to restaurants. I think I started this to signify my new life and new way of eating. In it I keep what I consider to be the essentials of a low carb high fat lifestyle.

For all you voyeurs and curious alike out there I will list the contents:
-Sunflower seeds or wasabi edamame seeds to add some zing and crunch to salad… and yes, I realize Edamame is soy. I don’t have that much though.
-Butter packs they give you at restaurants so I’m not stuck with margarine, ever!
-A large pill bottle full of Ghee, which is clarified butter (butter without the dairy) so it is table safe.
-Bottle of Davinci sugar free syrup for coffee or Starbuck’s sugar free. My favourite flavour of the moment is Vanilla. Yum!
-A couple flavour packets of flavoured Splenda for emergencies when the syrup runs out.
-A couple of napkins for “more than one napkin is needed” emergencies… they happen more often than my messy self would care to admit.
-Cheap bottle of small hot sauce when I don’t want to bug the waitress or hunt down the Tobasco myself.
-Crystal lite flavoured powder to stir into regular water so I force myself to re-hydrate.
-Low carb flat wraps cut into thirds for when I want to eat a bacon cheeseburger with my hands and not a knife and fork.

I’m sure there are other things in there but you get the idea. I carry around these items in a fashionable pink “Baby Phat” makeup bag which my mom has nicknamed either my restaurant kit or more commonly “Food Bag”. If we’re meeting for a meal after work I will remind her to grab my “food bag”.

I used to be conscious about using my “food bag” in restaurants but I’ve gotten over it. People are either fascinated or horrified when they see me put extra butter or Ghee on my eggs (or under them so it melts). I will either give them a “you’re staring” look or make a comment that I’m on a low carb diet. Sometimes it opens up an interesting conversation. I am proud of my weight and health accomplishments and am proud to talk about it also.

I figure that unless they are paying for my meal they don’t have a right to judge what I do to my food. Even if they did pay for it, I would be paying for it in bad health if I ate the way of the S.A.D. (interesting acronym eh?), Standard American Diet.

I’ve become proud of my “food bag” over the years and realized I missed it on the cruise. It’s like having an old friend join you for brunch everyday. You notice it’s absense and realize something is missing.

Either you will be inspired as a low carber to start your own food bag; this will obviously work better for ladies than gents. Or you will think I’m more nuts than you originally thought. Either way, God bless 😉

News from the cruise!!

I was inspired by the cruise and decided to put my blogging chops to the test.  I was always great at creative writing in High School so I thought “why not?!”.  I’ll start a blog about my Low carb/High fat diet & lifestyle.  As many of you already know I have lost 100 pounds a few years ago and have been losing a few more or at least toning up the past year.  I have added Roller Derby and Rollerskating to my Skiing regimine in the winter time which has definitely helped my weight loss and fitness goals.

I have been talking to a few low carb people on Facebook for over a year and was glad to share this recent cruise on the Carnival Freedom to Key West, Grand Cayman and Ocho Rios with the group of over 100 low carb enthusiasts and experts in the low carb community.  We had speakers in a seminar room on the “at sea” days.  I found it so inspiring and have taken a lot away from it personally.  I especially enjoyed meeting a few people who I have admired personally and their contribution to the low carb high fat community.  Tom Naughton and his wife Chareva were a delight to get to know.  I was inspired by Jackie Eberstein, Dr. Atkins right hand clinical nurse for many year because she has a similar story to mine… undiagnosed hypoglycemia.  I regained my health in that regard after starting my low carb high fat lifestyle.  I might touch upon that in another blog.  Basically though I was self-diagnosed.

Jimmy and Christine Moore inspired me too due to their down to earthness and their own passion of the low carb high fat lifestyle.

I was especially inspired by Dr. Andreas Eenfeldt and the Swedish cruisers in our low carb group.  They have a big low carb high fat movement in Sweden and they are putting the brakes on the obesity & diabetes epidemic in that country with a healthy low carb high fat diet.  It inspired me to start calling my own “Way Of Eating” (usually referred to in Low Carb Forums as WOE) as Low Carb High Fat instead of just Low Carb.  It is generally agreed in low carb circles that if you eat low carb without high fat you can actually get sick.  It is unhealthy.  Fat is not to be feared.  Our low fat high carb eating in North America is causing so many people to be unhealthy and sick.  I was one of them, after all.  That is why I am so passionate about this WOE.  I don’t like other people suffering needlessly the way I did.

I will blog more later about the cruise because I have to get ready for my other passion, derby  😉
